Down Home Greens

This recipe is especially designed for people who love that tantalizing taste of good old collards. Totally meatless greens provides the taste of grandma's greens.

Ingredients

  • 2 bunches Collards
  • 2 bunches Spinach
  • 2 bunches Turnip greens
  • 1 medium Red Pepper
  • 1 medium Green Pepper
  • 1/2 small Eggplant
  • 2 small garlic cloves ( optional )
  • 1/2 teaspoon grill mate smokehouse maple
  • 1/2 teaspoon Braggs Liquid Aminos
  • 1/2 teaspoon honey ( if desired)
  • 1 small Valdalia onion or scallion
  • 1 tbsp Nutrional Yeast
  • 1 dash Chipotle all purpose seasoning

Instructions

  1. 1) In a small mixing bowl chop or dice the red pepper, green pepper, garlic, eggplant, and onion. Pour a  small amount of olive oil in a skillet or desired cooking pan, sautee  until tender.

    2) Add collards and spinach pour just enough water over the mixture  to cover the greens, be sure not to put to much water, add hickory smoke, braggs liquid aminos , and honey allow mixture to cook down until greens are tender. Serve with cornbread or as a favorite side dish.
